Raw Chocolate Cheesecake using Cacao Nibs

Using Cacao nibs in desserts is one of my favorite things! Cacao contains a wide array of unique properties and minerals, including high levels of sulfur and magnesium. It may increase your focus and alertness and contains nutrients to keep you happy. Chocolate and cacao are often associated with love. All this is due to phenylethylamine contained in the cacao. Anandamide can be produced in the brain when we are feeling great, cacao makes anandamide stick around longer.

All chocolate comes from the seeds or beans of the cacao fruit. RAW CACAO NIBS (gently crushed beans) are the ideal way to satisfy your cravings and do your body, mind, and spirit a favor in the process! In its raw unadulterated state chocolate is actually a valuable potent super-food loaded with nutrients and neuro-peptides very similar to the ones our bodies create when we are in love! Many of these molecules are damaged or destroyed by heat making even the best regular chocolate a poor second when it comes to delivering the full satisfaction potential that chocolate has to offer. (regular chocolate uses roasted beans) RAW CHOCOLATE is fun to share and it definitely has wonderful effects on the body and mind!

According to David Wolfe, respected raw food authority, conscious lifestyle activist, and noted author of the book: Sunfood Diet Success System, experiments proving that chocolate has a much more stimulating effect when cooked. One experiment conducted with a decoction of roasted ground cacao beans in boiling water produced an excitement of the nervous system similar to that caused by black coffee, an excited state of circulation, and an accelerated pulse. Interestingly, when the same decoction was made with raw, un-roasted beans neither effect was noticeable, leading the experimenters to conclude that the physiological changes were caused by aromatic substances released during roasting.

Cacao contains massive quantities of magnesium which builds strong bones and balances brain chemistry important for a natural optimistic outlook. Cacao contains more magnesium than any other food known! This is likely the reason that women crave chocolate more during their menstrual cycle.

Of all mineral deficiencies that arise on Standard American Diet (SAD), magnesium is the the most common, with over 80% of Americans are chronically deficient in Magnesium!

Chocolate contains Phenylethylamine (PEA). PEA can increases focus and alertness and helps us feel connected to others. Our brains naturally produce a small amount of PEA all the time and much greater amounts when we are in love.. This is no doubt why chocolate and love have such a deep correlation. PEA also plays a role in increasing focus and alertness.

Cacao also contains a wonderful natural phyto-chemical called anandamide. Ananda is the Sanskrit word for BLISS and its no coincidence that our brains naturally produce anandamide when we are feeling bliss! Cacao also contains enzyme inhibitors that increase the amount of time that anandamide anandamide can stay in circulation in your body. This allows the wonderful effects of chocolate to last a longer time.

This is truly one of my all time favorite desserts. And the fact that it is actually good for me is a complete bonus. I would eat this even if it was 'sinful.' This is nice enough to fool even your most discerning foodies that are not even into raw food or health food. Each ingredient in this is actually good for you! There is not one single thing in here that is neutral or harmful. That means we can eat desserts like this every single day with absolutely no guilt at all. Not only no guilt for eating it- but we should eat a little bit of this each day! Now, that's my kind of living.

Raw Chocolate "Cheesecake" with Cacao Nibs:

This is truly one of my all time favorite desserts. And the fact that it is actually good for me is a complete bonus. I would eat this even if it was ’sinful.’ This is nice enough to fool even your most discerning foodies that are not even into raw food or health food. Each ingredient in this is actually good for you! There is not one single thing in here that is neutral or harmful. That means we can eat desserts like this every single day with absolutely no guilt at all. Not only no guilt for eating it- but we should eat it! Now that’s my kind of life! Truly, how life and eating were meant to be!

Crust:

1 cup Coconut

1 cup Walnuts, Pecans or Almonds

pinch salt

2 to 3 Medoole Dates (pitted)

Handful of cacao nibs (optional)

Filling:

1 cup Almond Milk (1 cup raw almonds, 2 cups water- blend and drain)

2 cups soaked raw Cashews (at least one hour)

1 cup raw Coconut Oil

1/2 cup Raw Cacao powder (Use pre-ground, or grind Cacoa Nibs)

1 tsp. vanilla

pinch salt

pinch Stevia

1 tbs yacon syrup

Raw, organic honey to taste

Pour filling into the crust and put in freezer for at least one hour to set up. Take out, garnish with berries or simple berry sauce and devour!
